Chicken Basque Recipe
- 1 1/2 pound Italian sausage, cut into 2-inch pcs
- 2 (3 1/2 lb.) chickens, cut into pcs
- 6 tbsp. butter
- 1 lg. onion, minced
- 1 (16 ounce.) can tomato sauce
- 2 cloves garlic, chopped
- 1/2 c. black pitted olives, sliced
- 1/2 c. stuffed green olives, sliced
- 1 c. white wine or possibly water
- 1 c. slivered almonds
- Salt and pepper to taste
- Heat half the butter in a large heavy pot.
- Quickly brown the chicken pcs in it on both sides.
- When brown, remove pcs and set aside.
- Add in the remaining butter to pan and saute/fry the onions till they are golden brown.
- Pour in the tomato sauce and wine, add in the garlic.
- Place chicken back into pan.
- Add in sausage and simmer 30 min.
- Add in the sliced olives, salt and pepper.
- Simmer 5 min.
- Sprinkle with the almonds and serve warm.
- Serves 8.
