Boysenberry Filled Cinnamon Muffins Recipe

  1. Combine first 5 ingredients in a medium bowl, and make a well in center of mix.
  2. Combine buttermilk, margarine, and egg, and stir well.
  3. Add in to the flour mix, stirring just till moistened.
  4. Spoon about 1 Tbsp.
  5. batter into each of 12 muffin c. coated with cooking spray.
  6. Spoon 1 tsp.
  7. preserves into center of each muffin c.
  8. (don't spread over batter), and top with remaining batter.
  9. Combine 1 Tbsp.
  10. sugar and 1/4 tsp.
  11. cinnamon; stir well.
  12. Sprinkle proportionately over muffins.
  13. Bake at 400 degrees for 20 min or possibly till muffins spring back when touched lightly in center.
  14. Remove muffins from pans immediately, and place on a wire rack.
  15. Yield: 1 dozen (serving size: 1 muffin).
