Potato Cakes

  1. dice the onion, crush the garlic and shred the leek.
  2. saute the onion and leek for a few minutes without browning.
  3. add the garlic and remove from heat
  4. in a mixing bowl combine all the ingredients together
  5. heat the oil on a high heat.
  6. divide the mash mix into 4 balls.
  7. place in pan and fry until brown then flip over carefully and repeat.
  8. takes about 5 minutes each side
  9. I served with beans, scrambled eggs and toast with a big dollop of brown sauce.
  10. as I was extra hungry I had 3 while my daughter had just the one :)
