Potato Cakes
- 200 grams leftover mashed potato
- 1/3 leek
- 1 small onion
- 1 small clove of garlic
- 1 tbsp flour
- 1 salt and pepper to taste
- 1 oil for frying
- dice the onion, crush the garlic and shred the leek.
- saute the onion and leek for a few minutes without browning.
- add the garlic and remove from heat
- in a mixing bowl combine all the ingredients together
- heat the oil on a high heat.
- divide the mash mix into 4 balls.
- place in pan and fry until brown then flip over carefully and repeat.
- takes about 5 minutes each side
- I served with beans, scrambled eggs and toast with a big dollop of brown sauce.
- as I was extra hungry I had 3 while my daughter had just the one :)
