Granny's Mexican Chicken Recipe
- 1 fryer, boiled and minced or possibly 6 chicken breasts
- 1 onion, minced
- 3 cloves garlic, minced
- 1 c. chicken stock or possibly 1 can broth
- 1 can mild enchilada sauce
- 1 can cream of mushroom soup
- 1 c. grated cheddar cheese, mild
- 1 lg. bag corn chips
- Mix chicken with onion, garlic, broth and enchilada sauce and soup.
- Heat in pot bring to boil in large casserole dish.
- Pour layer of corn chips, then about half of chicken mix alternately top with cheese.
- Bake 45 min at 350 degrees.
