Egg Roll (Lumpia) Recipe
- 1 pound grnd pork
- 2 teaspoon shrimp, cooked
- 1 c. carrots, shredded
- 1/2 c. onion, finely minced
- 1/2 c. ham, cooked and finely minced
- 5 tbsp. raisins, finely minced
- 2 ounce. bean thread noodles
- 2 Large eggs, slightly beaten
- Salt and pepper, to taste
- 30 to 35 egg roll wrappers, or possibly use rice paper
- In a large bowl mix all ingredients, except wrappers, and blend thoroughly.
- Let mix stand 30 min For each egg roll wrapper, spoon on 2 Tbsp.
- of mix and roll up tightly.
- Dip end with beaten egg and seal.
- Deep fat fry till golden at 350 degrees.
