Mini Taco Meatloaves
- 1/2 cups Ketchup
- 1/4 cups Brown Sugar, Packed
- 2 Tablespoons Hot Sauce
- 2 pounds, 3-13 ounces, weight Ground Beef
- 2 cups Tortilla Chips, Crushed
- 1 cup Cheddar Cheese, Grated
- 1 cup Medium Salsa
- 1 whole Large Egg, Beaten
- 1 package (about 1 Oz. Packet) Taco Seasoning
- Preheat the oven to 350F and spray individual serving pans (I used large muffin pans) with non-stick cooking spray.
- In a small bowl whisk together the topping ingredients and set aside.
- In a large bowl mix together the beef, crushed tortillas, cheese, salsa, egg and taco seasoning until well combined.
- Divide the mixture and press firmly into your prepared baking pans.
- Bake for 20 minutes, remove, and spread a heaping teaspoonful of the topping onto each meatloaf.
- Bake for a further 20 minutes or until cooked through completely.
