Peas with Mint and Black Pepper

  1. Chop mint.
  2. In a small saucepan cook peas with water and sugar, covered, over moderately high heat until tender, 4 to 5 minutes.
  3. In a sieve drain peas and in a bowl toss with mint, butter, pepper, and salt to taste.
