homemade tacos
- 10 corn tortillas
- 1 vegetable oil
- 1 can black beans
- 1 bunch cilantro
- 1 1/2 white or yellow onion
- 1 paprika
- 1 taco seasoning
- 1 cup shredded cheese
- 2 cup diced chicken
- 1 cup corn
- the secret to this recipe is frying the tortillas correctly.
- fill the pan on medium heat with approx 1/2 inch oil in bottom.
- once fully heated, slide the tortilla in as to get oil on both sides.
- suppress bubbles in the tortilla with your tongs.flip until slightly stiff.
- using tongs carefully fold in the middle of the tortilla and hold to allow a 45 degree angle.
- hold this until the tortilla solidifies and browns on one half, then flip to the other side and repeat.
- pour the entire can of black beans into a sauce pan.
- Add paprika, taco seasoning, other seasonings to taste.
- Heat til bubbling.
- Reduce to a simmer til ready.
