Pepper Olive and Garlic Rice

  1. In medium saucepan, heat oil.
  2. Saute red pepper until beginning to soften, about 3 minutes.
  3. Add garlic and cook, stirring, 1 minute.
  4. Add rice and broth.
  5. Bring to a boil over high heat.
  6. Cover, remove from heat and let stand until liquid is absorbed and rice is tender, about 5 minutes.
  7. Stir in olives and season with pepper.
  8. Fluff with a fork before serving.
