Pepper Olive and Garlic Rice
- 2 tablespoons olive oil
- 1 medium red bell pepper, chopped
- 3 garlic cloves, minced
- 2 cups quick-cooking rice
- 2 cups chicken broth
- 34 cup sliced green olives
- 14 teaspoon pepper
- In medium saucepan, heat oil.
- Saute red pepper until beginning to soften, about 3 minutes.
- Add garlic and cook, stirring, 1 minute.
- Add rice and broth.
- Bring to a boil over high heat.
- Cover, remove from heat and let stand until liquid is absorbed and rice is tender, about 5 minutes.
- Stir in olives and season with pepper.
- Fluff with a fork before serving.
