Creole Spinach & Crab Cakes
- 1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
- 1-2/3 cups hot water
- 1 tsp. lemon juice
- 1 pkg. (10 oz.) frozen chopped spinach, thawed, drained and patted dry
- 1 can (6 oz.) crabmeat, drained, flaked
- 3 eggs
- 1 cup KRAFT Grated Parmesan Cheese
- 1/2 tsp. ground red pepper (BAM!)
- 2 Tbsp. butter or margarine
- Mix stuffing mix, hot water and lemon juice in large bowl.
- Stir in remaining ingredients except butter.
- Shape into patties, using about 1/4 cup crabmeat mixture.
- Cook patties in butter in large skillet on medium heat 5 minutes on each side or until browned and thoroughly heated.
- Serve with MIRACLE WHIP Salad Dressing or KRAFT Mayo Real Mayonnaise, if desired.
