Egg and Spinach Soy Milk au Gratin
- 1/2 bunch Spinach
- 2 Potatoes
- 2 Eggs
- 200 ml Soy milk
- 1 tsp Soup stock cube granules
- 1 dash Salt and pepper
- 40 grams Pizza cheese
- 1 Parmesan cheese
- 10 grams Butter
- 1 dash Salt and pepper
- Boil the eggs and slice into rounds.
- Boil the spinach and slice into 4-5 cm pieces.
- Cut the potatoes into 5 mm thick slices.
- Heat the sliced potatoes and ingredients marked in a saucepan.
- Bring to the boil, but make sure the soy milk doesn't boil over.
- Then turn the heat to medium low, and simmer until the potatoes soften.
- Melt the butter in a frying pan and saute the spinach.
- Season with salt and pepper.
- Put the potato and soy milk from Step 2 in a heatproof dish, then top with the spinach and boiled egg slices.
- Sprinkle on some pizza cheese and Parmesan cheese.
- Bake in the toaster oven for 7-10 minutes until golden.
