Egg and Spinach Soy Milk au Gratin

  1. Boil the eggs and slice into rounds.
  2. Boil the spinach and slice into 4-5 cm pieces.
  3. Cut the potatoes into 5 mm thick slices.
  4. Heat the sliced potatoes and ingredients marked in a saucepan.
  5. Bring to the boil, but make sure the soy milk doesn't boil over.
  6. Then turn the heat to medium low, and simmer until the potatoes soften.
  7. Melt the butter in a frying pan and saute the spinach.
  8. Season with salt and pepper.
  9. Put the potato and soy milk from Step 2 in a heatproof dish, then top with the spinach and boiled egg slices.
  10. Sprinkle on some pizza cheese and Parmesan cheese.
  11. Bake in the toaster oven for 7-10 minutes until golden.
