Pineapple Brown Betty
- 4 ounces amaretti cookies
- 14 cup pecans
- 13 cup light brown sugar
- 1 tablespoon butter, cut up
- 12 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 2 (20 ounce) cans pineapple chunks, drained
- Preheat the oven to 350.
- In a food processor, combine the cookies, pecans, brown sugar, butter, cinnamon and vanilla and pulse until cookies are finely ground.
- In an 8 inch square baking dish, toss the pineapple with the crumb mixture.
- Bake for 30 minutes or until the pineapple is piping hot and the crumbs are crusty.
