Braised Spareribs With Red Bean Cheese Recipe

  2. Cut ribs apart; then with a cleaver, chop each, bone and all, in 1-inch sections.
  3. Mince garlic clove and ginger root.
  4. Cut scallion tops in 1-inch lengths.

  6. Mash red bean cheese and combine with soy sauce, sugar and salt.

  8. Heat oil in a heavy pan.
  9. Add in chopped garlic and ginger and stir-fry a few times.
  10. Add in spareribs and stir-fry to coat with oil.
  11. Add in red bean cheese mix and stir-fry till ribs begin to brown.

  13. Add in water and heat quickly; then simmer, covered, till ribs are done
  14. (about 30 min).
  15. If liquid evaporates, add in some boiling water to prevent burning.
  16. 5.
  17. Blend cornstarch and remaining cool water to a paste; then stir in to thicken.
  18. Sprinkle with scallion tops and serve.
