Razor Clam and Zucchini Fritters with my Avocado Sauce
- 2 zucchini
- 4 eggs
- 1 cup whole milk or buttermilk
- 1 salt
- 8 oz Razor Clams or canned clams
- 1 Small onion
- 1 clove garlic
- 1/2 cup Italian bread crumbs
- 1/2 cup all-purpose flour
- 2 tbsp Fresh parsley
- 1 tbsp Italian seasoning
- 1 tsp baking powder optional
- 1/4 cup olive oil
- Shred the zucchini and place in a strainer with salt for 2 hours.
- Put the zucchini in cloth towel and squeeze out as much liquid as possible.
- Mix everything together except the clams and zucchini.
- Chop up the clams and add them with the juices to the mixture a long with the zucchini.
- Clams and zucchini always very in moisture content.
- So, don't be afraid to adjust.
- Fry in electric skillet at 375 or in a pan at medium high heat with oil.
