Albacore Tuna Fettucine
- 4 c fresh broccoli florets or 10 oz pkg frozen
- 1/2 lb. fettucine
- 1 12 1/2 ounce can solid white albacore tuna in water, drained
- 1 c part skim ricotta cheese
- 1/3 c Parmesan cheese
- 1/2 c low fat milk
- 1/2 tsp garlic salt
- 1/2 tsp dried Italian seasoning
- salt and pepper to taste
- In a large pot of boiling water. cook broccoli until tender-crisp.
- Remove with a slotted spoon to serving bowl.
- Add fettucine to same pot of boiling water and cook until tender. Drain and add to broccoli.
- Stir in albacore tuna.
- In same pot, combine remaining ingredients, stirring until sauce is smooth and heated through.
- Season to taste with salt and pepper.
- Pour over pasta
- mixture and toss.
