Smart-Choice Potato-Topped Mini Meatloaves

  1. Heat oven to 375 degrees F.
  2. Mix meat, stuffing mix, water and steak sauce; press into 12 muffin pan cups sprayed with cooking spray.
  3. Bake 20 to 25 min.
  4. or until done (160F).
  5. Add Neufchatel and garlic to potatoes; stir until Neufchatel is melted.
  6. Stir in parsley.
  7. Scoop over meatloaves.
  8. Serve topped with gravy.
