Mama's Creamy Cheese Sauce
- 2 12 tablespoons butter
- 14 cup flour
- 2 tablespoons water
- 12 cup milk
- 2 -3 slices American cheese (to taste) or 2 -3 slices cheddar cheese (to taste)
- salt and black pepper, to taste
- Melt butter over low heat.
- Stir in flour and raise heat to medium.
- Stir the roux for about 1 minute, then take it off the heat.
- Continue to stir off the heat until it cools a bit for a couple of minutes.
- Add just enough water to thin the roux a bit and stir to incorporate.
- Add in 1/4 cup of milk and place the mixture over low heat.
- Stir constantly until the mixture thickens, then add in the second 1/4 cup of milk and stir constantly until it thickens to your liking.
- Take the cream sauce off the heat and add in cheese, salt, and pepper.
- Stir until the cheese is melted and all ingredients are well incorporated.
- Serve over broccoli, pasta, or whatever you please!
