Potato Cakes with Marinated Tomatoes

  1. Marinate tomatoes and onions in dressing 1 hour.
  2. Cut potatoes in half; scoop out flesh.
  3. Discard peels.
  4. Place potato flesh in large bowl; mash well.
  5. Shape potatoes into patties, using 1/4 cup potatoes for each patty.
  6. Add potato patties to hot oil in large skillet; cook 3 min.
  7. on each side or until golden brown on both sides.
  8. For each serving: Place 2 warm potato cakes on serving plate; top with 2/3 cup tomato mixture, 1-1/2 tsp.
  9. cheese and 1 Tbsp.
  10. basil.
