Potato Cakes with Marinated Tomatoes
- 1-1/2 gal. tomatoes, thinly sliced Safeway 1 lb For $1.29 thru 02/09
- 1-1/2 qt. red onions, thinly sliced
- 2 cups KRAFT Fat Free Italian Dressing
- 24 each Baked potatoes
- 3/4 cup olive oil
- 1-1/2 cups Crumbled feta cheese
- 3 cups fresh basil leaves
- Marinate tomatoes and onions in dressing 1 hour.
- Cut potatoes in half; scoop out flesh.
- Discard peels.
- Place potato flesh in large bowl; mash well.
- Shape potatoes into patties, using 1/4 cup potatoes for each patty.
- Add potato patties to hot oil in large skillet; cook 3 min.
- on each side or until golden brown on both sides.
- For each serving: Place 2 warm potato cakes on serving plate; top with 2/3 cup tomato mixture, 1-1/2 tsp.
- cheese and 1 Tbsp.
