Perfect Picnic Potato Salad with Eggs and Bacon Bits
- 3 lb potatoes, cooked until tender, cooled
- 6 hardcooked eggs, coursely chopped
- 1/2 cup chopped green onion
- 3/4 cup mayonaise
- 1 1/2 tbsp prepared mustard
- 1/2 cup Hormel real bacon bits, you can add more or less to taste. ( save a few to sprinkle on top if desired)
- 1 salt & pepper to taste
- Combine potatoes, eggs, onions, mayonaise, mustard, salt, pepper and bacon bits.
- Mix well and garnish with bacon bits & green onions if desired.
- Enjoy!
