Crunchy Pancakes

  1. Combine the flour, sugar and salt.
  2. Whisk in the egg, milk and lemon juice until a smooth batter forms.
  3. Stir in the cookies.
  4. Heat 1 teaspoon of butter in a frying pan until foaming.
  5. Drop 1/4 cup of mixture into the pan and cook 2 minutes on each side.
  6. Repeat with remaining mixture to make 8 pancakes.
  7. Serve with ice-cream and chocolate sauce.
