Thai Chicken With Fresh Basil Recipe

  1. Skin chicken and cut into 1.
  2. 25 X 1 in strips.
  3. Remove stems from chilies and cut lengthwise into thin strips (throw away the seeds).
  4. Heat oil in wok or possibly large skillet over high heat.
  5. Add in garlic and stir till golden, about 10 seconds.
  6. Add in 1/2 c. of basil and the chilies and stir-fry just till basil wilts, about 1 minute.
  7. Add in chicken and stir-fry about 3 min.
  8. Add in nuoc mam, water and sugar and stir-fry till sauce bubbles and thickens slightly, about 2 min.
  9. Add in remaining 1/4 c. of basil and stir-fry till just wilted, about 5 seconds.
  10. Serve immediately with steamed rice.
