Ham and Hash Brown Casserole
- Cooking spray
- 12 ounces frozen fat-free, no-salt-added shredded hash brown potatoes
- 4 ounces lower-sodium, low-fat ham, thinly sliced and chopped (about 1 cup)
- 3/4 cup chopped red bell pepper
- 1/2 cup chopped onion, thawed if frozen
- 1/2 cup chopped green onions (green and white parts) (about 9 medium)
- 1/2 cup fat-free sour cream
- 1/2 cup fat-free evaporated milk
- 1 finely chopped medium fresh jalapeno or 1/4 teaspoon cayenne
- 1/8 teaspoon salt
- 3 ounces shredded low-fat sharp Cheddar cheese (about 3/4 cup)
- Preheat the oven to 350F.
- Lightly spray a 9-inch square glass baking dish with cooking spray.
- In a large bowl, stir together all the ingredients except the Cheddar.
- Spoon into the baking dish.
- Bake for 50 minutes, or until the potatoes are tender.
- Stir in half the Cheddar.
- Sprinkle with the remaining Cheddar.
- Bake for 5 minutes, or until the Cheddar is melted.
- You can save almost 40 minutes by using your microwave when preparing this dish.
- In a 9-inch square microwaveable baking dish, stir together all the ingredients except the Cheddar.
- Cook, covered, on 100 percent power (high) for 15 minutes, or until the potatoes are tender, stirring every 5 minutes.
- Sprinkle with all the Cheddar.
- Cook, uncovered, on 100 percent power (high) for 1 minute, or until the Cheddar is melted.
