Buttery Shrimp Scampi

  1. Peel shrimp, leaving on tails.
  2. Heat the butter, oil and garlic in a broiler proof pan.
  3. Stir in the parsley, cayenne, and lemon juice.
  4. Add the shrimp, tossing to coat.
  5. Place under the broiler 6 inches from heat, and broil until done, about 5 minutes.
  6. Check half way through the cooking time and turn shrimp as necessary.
  7. Serve with crusty bread for dipping in the sauce.
