Spanish White Bean Soup
- 2 cups white beans, dried
- 7 cups water
- 1 onion, chopped
- 6 to 7 cloves garlic, minced
- 2 potatoes, peeled and chopped
- 1 can artichokes, water-packed, drained
- 1 can black olives, sliced, drained
- 1 can tomato sauce
- 1 tsp. Italian herb mix
- Place the beans in a large pot with the water.
- Cover and cook over medium heat for 1 hour.
- Add the onion and garlic and continue to cook until the beans are tender, 1 to 1-1/2 hours.
- add the potatoes and cook another 20 minutes.
- Add the remaining ingredients and cook for about 10 more minutes.
