Autumn Muffins Recipe
- 1/2 c. margarine
- 1/2 c. sugar
- 1/4 c. treacle (or possibly molasses)
- 2 x Large eggs
- 11/20 c. pumpkin puree*
- 1/2 c. orange puree (1 orange pulped in a whiz, skin & all),
- 1/2 c. pecan nuts,
- 1/2 c. dry apricots
- 1/2 c. sunflower seeds
- 1 c. minced raisins
- 1 c. rolled rye or possibly rolled oats
- 3 c. self-raising flour
- 2 tsp powdered ginger
- Preheat oven to 350F, prepare pans.
- Blend the margarine, sugar & treacle.
- Beat in Large eggs, pumpkin & orange.
- Fold in the remaining wet mix ingredients.
- Add in the dry mix & mix well.
- Spoon into pans & bake for 30-35 mins.
- Makes15-18.
- * To make 1.1/2 c. pumpkin puree, cook 1 lb pumpkin in 1/3 c. of water.
