Bills Chile
- 2 lbs beef round steak, cubed..Or sub ground chuck
- 1 tablespoon garlic salt
- 3 tablespoons olive oil
- 1 large Spanish onion, chopped
- 1 bell pepper, any color
- 2 red chili peppers
- 5 garlic cloves, sliced thin
- 5 tablespoons chili powder
- 2 tablespoons cumin
- 1 teaspoon red pepper
- 4 (15 ounce) cans red kidney beans
- 5 (14 ounce) cans Mexican-style tomatoes
- 1 cup red wine or 1 fairly strong beer
- 1 (6 ounce) can tomato paste
- 3 tablespoons cornstarch or 3 tablespoons flour
- 1 tablespoon flour or 1 tablespoon cornstarch
- Chop onion and cook in olive oil about 5-7 minute add meat and add peppers and garlic and cook for 3-4 more minute add the dry spices and cook and stir for 2-4 minute Add beans stewtd tomatoes and wine and bring to a boil.for a few minutes cover and simmer for 4 to 6 plus hours.salt to taste.
- You can thicken it with the flour if needed.
