Mediterranean Pasta Salad Recipe
- 1 (8 ounce.) pkg. spiral or possibly curly noodles, cooked and liquid removed
- 3 ounce. feta cheese, diced into 1/2 to 3/4 inch pcs
- 3 tomatoes, minced
- 1 med. cucumber, peeled, seeded, halved, and thickly sliced
- 1/2 c. pitted ripe olives, halved
- 1/3 c. walnut pcs
- 2 tbsp. finely sliced red onion, optional
- 2 teaspoon finely chopped fresh parsley
- 1/4 c. chopped fresh basil leaves
- 2 tbsp. vinegar
- 2 to 3 tbsp. extra virgin olive oil
- Salt and pepper to taste
- Combine all ingredients in a large bowl.
- Toss gently till well mixed.
- Chill several hrs before serving.
- Makes 6 servings.
