Sweet Sausage and Vegetable Chili
- 2 tbsp olive oil, extra virgin
- 5 clove fresh garlic, minced
- 1 cup red onion, chopped
- 2 tbsp chili powder
- 2 tsp ground cumin
- 2 1/2 cup chopped fresh tomatoes
- 1 can black beans, drained
- 1 cup red wine
- 1 cup chopped bell pepper, any color
- 1 cup chopped zucchini
- 1 cup whole corn kernels
- 1 cup chopped portabella mushrooms
- 1 cup chopped fresh cilantro
- 1/4 tsp cayenne pepper
- 1/4 tsp white pepper
- 1 lb sweet sausage
- 1 cracked black pepper and salt to taste
- Cook sausage in separate pan until brown and drain.
- In oil saute onion, garlic, chili powder, and cumin for 5 mins until soft.
- Add the rest of the ingredients including the sausage and bring to boil.
- After you have a boil reduce heat and simmer for about 20-25 mins and serve.
