Smoked Chicken and Spinach Salad
- 1 punnet or 6 heads witlof, leaves separated
- 200g spinach leaves
- 425g can mango slices drained, reserve 2 tablespoons juice Whole Foods 2 ea For $4.00 thru 02/09
- 1 Lebanese cucumber, cut into fine slices
- 250g smoked chicken, sliced, removed of all skin and visible fat Whole Foods 1 lb For $3.99 thru 02/09
- 1/4 cup KRAFT FREE Mayonnaise
- 1/2 cup low fat natural yoghurt
- 1 tablespoon sweet chilli sauce
- 1/2 cup chives, cut into 1cm lengths, or snow pea sprouts
- Arrange the witlof, spinach, mango slices, cucumber and smoked chicken onto a serving platter.
- Combine together the mayonnaise, yoghurt, chilli sauce and reserved juice to form a dressing.
- Drizzle the dressing over the salad and chill.
- Sprinkle with the chives and serve immediately.
