Neembu Chawal (Lemon Rice)

  1. Cook rice and cool slightly.
  2. Heat oil in a heavy skillet over medium heat and add mustard seeds.
  3. Cover to avoid splattering until mustard seeds stop popping.
  4. Add curry leaves and chana dal.
  5. Cook for a few seconds until dal is light brown.
  6. Remove from heat and stir in cayenne pepper (if using), and turmeric.
  7. A few seconds later add lemon juice.
  8. Add rice and salt.
  9. Mix gently to avoid breaking rice.
  10. Return to stove and heat through.
  11. Serve cold or warm.
