brown sugar glazed baked plantains
- 6 ripe plantains
- 3/4 cup brown sugar
- 4 tbsp margerine or butter
- cut ends off plantains then cut in half then cut each half length wise in half
- spray a 9x11 cake pan with no stick spray
- lay plantains out in the bottom then sprinkle half of the sugar over them, then layer again with plantains and brown sugar and drop the 4 tbsp butter or margerine in random spots on top and cover with foil.
- place in oven at 400' for about 30 min.
- then uncover and using basting brush dip it in the melted sugar and butter in the bottom of the pan and spread it all over top, cook 10-15 minutes more till a glossy golden brown.
- you can serve as is or top with whip cream or lechera sweetened condensed milk
