Rodney's Chili
- 3 lbs lean ground beef
- 3 (14 ounce) cans chili beans
- 1 large onion (chopped)
- 2 jalapenos (diced and seeded)
- 3 garlic cloves (minced)
- 3 tablespoons hot sauce
- 1 (28 ounce) can rotel
- 1 (16 ounce) bag Fritos corn chips
- 3 cups cheddar cheese
- Cook meat loosely until done.
- Then drain and set aside.
- In the same pot add beans, onion, jalapenos, garlic, Rotel, and hot sauce.
- Cook over medium heat until onions are soft about 10 minutes.
- Then add in meat and let it simmer for 15 minutes stirring occasionally.
- Serve of Fritos and top with cheddar cheese.
