Brown Rice and Black Beans
- 2 1/4 cups minute rice brown
- 1 3/4 cups water boiling
- 30 ounces black beans canned, cooked
- 2 tablespoons margarine
- 1 large onions chopped
- 3 each garlic cloves chopped
- 1 medium green bell peppers
- 1/2 teaspoon cumin ground
- 1 1/2 cups salsa
- Cook rice as per instructions on the box and set aside.
- In a large frying pan, saute onion, garlic and green pepper in margarine.
- Add rice, beans, cumin and salsa and simmer about 20 minutes.
