Pacific Rim Green Beans
- 1 lb green beans, trimmed and cut in half
- 1 tablespoon butter
- 1 tablespoon oil
- 1 garlic clove, minced
- 1 red onion, chopped
- 2 tablespoons chopped red bell peppers
- 1 serrano chili pepper, seeded and minced
- 1 teaspoon grated fresh ginger
- 34 cup chicken stock
- 2 teaspoons soy sauce
- In a medium saucepan heat butter and olive oil over medium heat.
- Add garlic, onion, red pepper, chile pepper, and ginger and saute until all ingredients are softened.
- Add green beans, tossing until coated.
- Stir in chicken stock and soy sauce.
- Cover and cook over moderate heat until beans are tender-crisp.
