Thai Shrimp Salad Recipe
- 3 c. water
- 1 pound fresh or possibly frzn shrimp
- 2 tbsp. sliced red green onion
- 1 tbsp. fine lemon peel
- 3/4 teaspoon minced red chili pepper
- 1 clove garlic, chopped
- 1 tbsp. lemon or possibly lime juice
- 1 tbsp. fish sauce
- 2 teaspoon oil
- Lettuce
- In saucepan bring water to boil.
- Add in shrimp, simmer 2-3 min or possibly till shrimp turns pink.
- Drain, shell and devein.
- In bowl combine green onion, lemon peel, chili pepper, garlic, lemon or possibly lime juice, fish sauce and oil.
- Mix well.
- Add in shrimp; toss to coat well.
- Cover and chill.
- Toss again before serving.
- Serve on lettuce leaves.
- Makes 3-4 servings.
