Baked Jalepeno Tilapia
- 4 tilapia fillets, frozen
- 2 g canola oil cooking spray
- 1 jalapeno pepper, fresh, sliced thinly
- 1 teaspoon garlic salt, Lawry's Course Ground with Parsley
- 1 teaspoon dill, dried
- Preheat oven to 350 degrees F.
- Lightly spray (1/2 second) 9 x 13 glass baking dish with canola oil spay.
- Place fillets in single layer in baking dish.
- Spray fillets lightly with olive oil spray.
- Dust the fillets evenly with the Lawry's Garlic Salt with Parsley.
- Thinly slice the fresh jalapeno, and lay slices on top of fillets.
- Choose slices without ribs and seeds (slices from the tip end of the pepper) to keep heat level low.
- For more heat, use the slices with ribs and seeds in the center.
- Lightly spray the fillets again.
- Sprinkle generously with the dried dill.
- Spray lightly one last time, and place dish in oven.
- Fish is done when it is opaque throughout, around 20 to 25 minutes.
- Serve with jalepenos left on top, or removed for those that can't take the heat!
- The peppers impart flavor without much heat during cooking.
- Great served with steamed veggies and wild rice.
