Mike's Baileys Beginners Cheesecake

  1. Bring cream cheese to room temperature or heat slightly in your microwave.
  2. Add everything in a bowl, except for lemon juice, chocolate chips and garnishments and blend until any lumps are fully dissolved.
  3. Slowly add lemon juice and blend with electric mixer to avoid curdling.
  4. Fold in chocolate chips with a spatula and pour into your pre-made crust.
  5. Garnish as desired, cover and chill for several hours.
  6. Authors Notes: You can make this Cheesecake without the Cream De Menthe and increase your Baileys Irish Cream to 1/3 cup.
  7. Especially if you've used the mint chocolate chips.
  8. Also, serve these slices in smaller wedges than you usually would.
  9. They're super rich and pack a punch at 17% unburned alcohol.
