Mike's Baileys Beginners Cheesecake
- 1 Pre-made Graham Cracker Pie Crust Or Pre-made Chocolate Pie Crust
- 1 8 oz Philadelphia Cream Cheese
- 1/4 cup Baileys Irish Cream Liqueur
- 1/8 cup Green Creme de Menthe Liqueur
- 1 can Eagle Brand Condensed Milk
- 3/4 cup Mint Chocolate Chips
- 1 tsp Vanilla Extract
- 1/3 cup Lemon Juice
- 4 Mint Leaves garnishment
- 1/3 cup Mint Chocolate Chips garnishment
- 1/3 cup Graham Cracker Crumbs garnishment
- 1 Green Food Coloring optional - color to preference
- 1/2 cup Chocolate Sauce garnish drizzle
- Bring cream cheese to room temperature or heat slightly in your microwave.
- Add everything in a bowl, except for lemon juice, chocolate chips and garnishments and blend until any lumps are fully dissolved.
- Slowly add lemon juice and blend with electric mixer to avoid curdling.
- Fold in chocolate chips with a spatula and pour into your pre-made crust.
- Garnish as desired, cover and chill for several hours.
- Authors Notes: You can make this Cheesecake without the Cream De Menthe and increase your Baileys Irish Cream to 1/3 cup.
- Especially if you've used the mint chocolate chips.
- Also, serve these slices in smaller wedges than you usually would.
- They're super rich and pack a punch at 17% unburned alcohol.
