Chili Like Mom's

  1. You'll need an 8-12 qrt.
  2. pot for cooking.
  3. In a large skillet, break up and brown ground beef, drain thoroughly.
  4. While ground beef is browning, dice onion, bell pepper and mince garlic.
  5. Heat butter in the cooking pot, add onion, bell pepper and garlic, cook until soft and flavors have fused.
  6. Add the beef and stir in remaining ingredients to pot, cover and bring to boil for about 20 minutes, stirring occasionally.
  7. Lower heat to simmer, cover and continue simmering for about 4-6 hours stirring occasionally.
  8. The longer it simmers, the better it will be.
  9. It should be noted too, you can mix together your favorite beans, red, dark red, pinto, black, whatever.
  10. All the ingredients can be tweaked to your liking.
  11. When serving, you can add the shredded cheese -- I also found that a drizzle of yellow mustard and a few drops of Green Tabasco gives it a great chili dog flavor with out the dog.
