Everything Tortilla Crisps

  1. Heat oven to 400 degrees.
  2. Line baking sheet with parchment paper.
  3. Working with one tortilla at a time, brush 1 side with melted butter.
  4. Sprinkle with 1 heaping tablespoons Parmesan cheese.
  5. Gently press to adhere.
  6. Turn tortilla over and brush with egg white.
  7. Sprinkle each of the seeds and flakes.
  8. Sprinkle lightly with kosher salt.
  9. Cut into four inch strips with a fluted or straight pastry wheel or with a pizza cutter.
  10. Place cheese side down on baking sheet.
  11. Bake for 8-10 minutes or until golden brown.
  12. Cool on wire rack.
  13. Store in an airtight container with wax paper between layers.
