Everything Tortilla Crisps
- 8 burrito-size flour tortillas
- 14 cup melted butter
- 34 cup grated parmesan cheese
- 1 large egg white, beaten with fork
- toasted sesame seeds
- onion flakes
- garlic flakes
- kosher salt
- poppy seed
- fennel seed
- caraway seed
- Heat oven to 400 degrees.
- Line baking sheet with parchment paper.
- Working with one tortilla at a time, brush 1 side with melted butter.
- Sprinkle with 1 heaping tablespoons Parmesan cheese.
- Gently press to adhere.
- Turn tortilla over and brush with egg white.
- Sprinkle each of the seeds and flakes.
- Sprinkle lightly with kosher salt.
- Cut into four inch strips with a fluted or straight pastry wheel or with a pizza cutter.
- Place cheese side down on baking sheet.
- Bake for 8-10 minutes or until golden brown.
- Cool on wire rack.
- Store in an airtight container with wax paper between layers.
