Touch of Sweetness Salsa
- 3 cups Frsh Ripe Tomatoes
- 1/2 cups Fresh Green Sweet Bell Peppers
- 1/4 cups Hot Red Chili Pepper
- 1 cup Fresh Red Onion
- 1 bunch Fresh Cilantro
- 1 teaspoon Salt
- 1/2 teaspoons Fresh Ground Pepper
- 1/2 cups Granulated Sugar
- Rinse tomatoes and dry them with paper towels.
- Cut off top and bottom ends and discard.
- Cut tomatoes into 1/2 cubes, enough to equal 3 cups.
- Place in a medium sized mixing bowl.
- Rinse a bell pepper and dry with paper towels.
- Cut off top and bottom ends and discard.
- Cut pepper in half lengthwise.
- Remove the membranes and seeds and discard.
- Cut into 1/2 cubes, enough to equal 1/2 cup.
- Add to the bowl with the tomatoes.
- Carefully cut off top and bottom of the chili pepper.
- Cut in half lengthwise.
- Remove the membranes and seeds and discard.
- Cut into 1/4 cubes.
- Add to the bowl.
- Remove outer skin of the onion.
- Cut onion into 1/2 cubes, enough to equal 1 cup.
- Add to the bowl.
- Rinse the cilantro, dry with paper towels.
- Cut off all leaves, and add to the bowl.
- Add salt, pepper, and sugar.
- Mix well.
- Chill for an hour.
- Serve with Ramp Crisps (see my TastyKitchen recipe box for this recipe) or other dipping chips.
