Golden Lemon Pound Cake

  1. In a large bowl, cream shortening and sugar until light and fluffy, about 5 minutes.
  2. Add eggs, one at a time, beating well after each addition.
  3. Stir in lemon juice and extract.
  4. Combine the flour, baking powder, salt and baking soda; add to the creamed mixture alternately with milk.
  5. Beat just until combined.
  6. Pour into a greased and floured 9-in.
  7. x 5-in.
  8. loaf pan.
  9. Bake at 350 for 55-60 minutes or until a toothpick comes out clean.
  10. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
  11. Dust with confectioners' sugar.
  12. Yield: 1 loaf.
