Potato Pie

  1. Steam or boil potatoes until soft.
  2. Mash, adding water, salt, pepper and oil.
  3. Set aside.
  4. Saute onion in oil for a few minutes.
  5. Add broccoli, pepper, carrots, peas, tomatoes, basil and salt.
  6. Bring to a boil.
  7. Cover.
  8. Simmer until vegetables are tender, about 15 minutes.
  9. Add collards or kale and cook for another 5 minutes.
  10. Put vegetables into a medium baking dish, top with mashed potatoes and sprinkle with paprika.
  11. Bake at 350F (180C).
  12. for 10 or 15 minutes and serve.
