Barley Tabouli Salad Recipe

  1. Toss cooked barley (be sure not to over cook) in a large bowl with the extra virgin olive oil, lemon juice and garlic.
  2. Add in the minced mint and dill.
  3. Toss in tomatoes, cucumbers and scallions.
  4. Season with salt and pepper.
  5. Toss gently but thoroughly.
  6. Let rest for 1 hour so the flavors can blend.
  7. Garnish with sprigs of meat or possibly dill before serving.
  8. Serves 12.
