Strawberry-Cream Cake
- 4 cups small fresh strawberries, divided Safeway 1 lb For $3.99 thru 02/09
- 1 pkg. (2-layer size) yellow cake mix
- 1 pkg. (3 oz.) JELL-O Strawberry Flavor Gelatin
- 1 cup milk
- 1/3 cup butter or margarine, melted
- 3 eggs
- 1 container (16 oz.) ready-to-spread vanilla frosting
- 1 cup thawed COOL WHIP Whipped Topping
- Heat oven to 350F.
- Reserve 7 strawberries for garnish; mash remaining berries.
- Beat next 5 ingredients in large bowl until blended.
- Add 1 cup mashed berries; mix well.
- Pour into 2 greased and floured 9-inch round pans.
- Bake 30 min.
- or until toothpick inserted in centers comes out clean.
- Cool cakes in pans 10 min.
- Remove from pans to wire racks; cool completely.
- Meanwhile, drain remaining mashed strawberries.
- Spoon frosting into medium bowl.
- Add mashed berries; mix well.
- Whisk in COOL WHIP until blended.
- Stack cake layers on plate, filling and frosting with COOL WHIP mixture.
- Garnish with reserved strawberries.
