Easy Rum and Raisin Ice Cream

  1. Preheat oven to 180C (350F).
  2. Place the walnuts on a baking tray and bake in oven for 10 minutes or till toasted.
  3. Meanwhile, in a pan combine raisins and rum.
  4. Cook over medium heat for 2-3 minutes (or till heated through).
  5. Set aside, covered until cooled to room temperature.
  6. In a large bowl place ice-cream, walnuts and raisin mixture and stir with a metal spoon until just combined.
  7. Spoon ice-cream mixture into a metal container and cover with foil.
  8. Place in the freezer for 4 hours or until firm.
