Chicken Caprese
- 4 chicken-breast cutlets (about 1 1/4 lb.)
- 3 tbsp. oil
- 1 1/4 lb. tomatoes, chopped
- 3 cloves garlic, sliced
- 1/2 tsp. salt
- 8 oz. fresh mozzarella balls, halved
- Fresh basil
- Roasted broccolini, for serving
- Lightly flour chicken, cookin in oil 6 minutes or until cooked through, turning once.
- Transfer cutlets to plate.
- To skillet, add tomatoes, garlic, and salt.
- Cook 3 minutes stirring and scraping.
- Top chicken with tomato sauce, mozzarella, and basil.
- Serve with broccolini.
