Banana Cream Squares

  1. Place 1 gal.
  2. of the chopped wafers (or 1 qt.
  3. of the chopped wafers for trial recipe), nuts, butter and sugar in food processor fitted with steel blade; process until well blended and all ingredients are finely crushed.
  4. Press 1-1/4 qt.
  5. of the crumb mixture firmly onto bottom of each of 3 full-hotel pans (or onto bottom of 1 full-hotel pan for trial recipe).
  6. Bake in 350F-standard oven 10 min.
  7. Cool completely on wire racks.
  8. Add mousse and dry pudding mixes to large bowl of mixer fitted with whisk attachment.
  9. Gradually add milk, beating on low speed just until moistened, stopping as needed to scrape side of bowl.
  10. Blend in vanilla and banana flavoring.
  11. Beat on medium speed 5 min.
  12. or until well blended.
  13. Spread banana slices onto crusts.
  14. Top each with layers of 2-1/4 qt.
  15. of the mousse mixture, 1-1/4 qt.
  16. of the remaining chopped wafers and 2 qt.
  17. of the whipped topping.
  18. Refrigerate several hours before serving.
