Award Winning Brisket

  1. rub brisket with choice of rub
  2. set in refrigerator over night
  3. inject brisket with one can of beef stock right before smoking
  4. cook brisket to 160 (around 3-4 hours)
  5. place brisket in aluminum pan
  6. inject with remaining can of beef stock and add apple juice to pan
  7. cover with aluminum foil and cook to 200 (around 4-6 hours)
