Spinach and Arugula Pesto
- 2 cups Tightly Packed Baby Spinach
- 1 cup Tightly Packed Arugula
- 2 cloves Garlic
- 1/4 cups Olive Oil
- 1/4 cups Grated Parmesan Cheese
- Salt To Taste
- Wash and pat dry the arugula and baby spinach.
- Add the arugula, spinach and garlic into a food processor.
- Put the lid on and process until well combined.
- With the food processor running, slowly stream in the olive oil until fully combined.
- Turn off the food processor and remove the blade.
- Spoon the pesto into a large bowl and stir in the Parmesan cheese.
- Add salt to taste.
- Serve over warm noodles of your choice.
