Chocolate Nut Brittle

  1. In a heavy saucepan over medium heat bring to boil sugar, syrup, water, salt, and butter, stirring constantly.
  2. Then cook, without stirring, to hard-crack stage (300F on candy thermometer).
  3. Remove from heat.
  4. Quickly stir in chocolate, then baking soday, vanilla and peanuts.
  5. Turn into greased jelly-roll pans; with greased spatula spread to cover pan.
  6. Cool.
  7. Turn out of pan onto waxed paper.
  8. With mallet break into irregular pieces.
